  • Hire reliable employees. Employee theft is a real risk in any environment. Wait staff might steal tips, overcharge customers, and even take money out of the cash register. Ideally, you should only hire employees who you know have a reputable background as a server.
  • Work only with trustworthy food vendors and utensil suppliers. Disreputable business practices by vendors may defraud the business.
  • Install a strong security system throughout the business. Use cameras, an alarm system, and other deterrents to keep potential thieves out. Many restaurants also have automatic lights and bell systems designed to alert authorities in case of break-ins.
  • Keep your restaurant's cash assets very secure. Make sure that only trusted employees can access safes, cash reserves and your registers. It is often a good idea in most businesses to keep only a small amount of cash on hand. Depositing profits in a bank guarantees a higher level of protection.
  • Store the restaurant's hard assets (such as china, silverware and expensive utilities) in secure places. Enforce an opening and closing procedure that includes securing the premises.
